Americana Peanut Cheesecake Recipe

  1. In small bowl, combine 3/4 c. minced peanuts, graham cracker crumbs and melted butter; mix well.
  2. Press crumb mix into bototom and 1" up sides of 9-inch springform pan.
  3. Chill crust 20 min or possibly till set.
  4. In large bowl with electric mixer at medium speed, beat softened cream cheese and peanut butter till fluffy.
  5. Gradually beat in condensed lowfat milk and mix well.
  6. Add in lemon juice and vanilla; blend well.
  7. Mix in whipped topping.
  8. Pour mix into prepared crust; garnish top with remaining 2 Tbsp.
  9. minced peanuts.
  10. Chill 2 to 3 hrs, or possibly till well chilled.
