Mrs. Potters Chicken

  1. Heat oven to 425F.
  2. Spray a large rimmed baking sheet with cooking spray.
  3. Combine crushed crackers, Parmesan and pepper in a bowl.
  4. Slice chicken in half horizontally, so you have 8 pieces total.
  5. Pound each chicken piece between two sheets of plastic wrap until thin, about 1/4 in thick.
  6. Coat chicken in butter, then dredge in cracker mixture, pressing crumbs firmly on each piece.
  7. Lay chicken in a single later on the baking sheet.
  8. Sprinkle excesos on top and bake for 12mins or until golden brown.
