Mrs. Potters Chicken
- 1/4 tsp black pepper
- 3/4 cup Parmesan
- 1 1/2 cup Crushed Ritz
- 4 lb boneless skinless chicken halves
- 2 tbsp unsalted butter, melted
- Heat oven to 425F.
- Spray a large rimmed baking sheet with cooking spray.
- Combine crushed crackers, Parmesan and pepper in a bowl.
- Slice chicken in half horizontally, so you have 8 pieces total.
- Pound each chicken piece between two sheets of plastic wrap until thin, about 1/4 in thick.
- Coat chicken in butter, then dredge in cracker mixture, pressing crumbs firmly on each piece.
- Lay chicken in a single later on the baking sheet.
- Sprinkle excesos on top and bake for 12mins or until golden brown.
