Pancetta, Cheese and Garlic Sauce.

  1. Melt 1 tablespoon of butter in a heated frying pan and lightly fry the pancetta and garlic for 5 minutes.
  2. Add the rest of the butter let it melt.
  3. Then flour and make a light dough, let cook for 30 seconds while stirring.
  4. Begin adding the cream bit by bit, whisking it constantly so that it don't get lumpy, now do the same with the milk.
  5. Stir in half of the cheese and let it melt then put in the rest of the cheese.
  6. Add salt and pepper to taste, simmer over a low heat for 5 minutes.
