Pancetta, Cheese and Garlic Sauce.
- 2 tbsp butter
- 150 grams pancetta, diced
- 3 tsp minced garlic
- 2 tbsp all-purpose flour
- 250 ml fresh cream
- 150 ml milk
- 300 grams mature cheddar cheese, greated
- Melt 1 tablespoon of butter in a heated frying pan and lightly fry the pancetta and garlic for 5 minutes.
- Add the rest of the butter let it melt.
- Then flour and make a light dough, let cook for 30 seconds while stirring.
- Begin adding the cream bit by bit, whisking it constantly so that it don't get lumpy, now do the same with the milk.
- Stir in half of the cheese and let it melt then put in the rest of the cheese.
- Add salt and pepper to taste, simmer over a low heat for 5 minutes.
