Easy Clam Soup
- 3 tablespoons olive oil
- 1 small onion, chopped
- 2 garlic cloves, chopped
- 1 (14 ounce) canitalian peeled tomatoes, drained and chopped
- 2 cups water
- 1 cup bottled clam juice
- 2 large red potatoes, peeled and cut in 1 inch cubes
- 1 teaspoon dried oregano
- 2 (6 1/2 ounce) canschopped clams
- 1 pinch cayenne
- In saucepan, heat oil over medium heat.
- Saute onion and garlic until softened.
- Add tomatoes, water and clam juice.
- Bring to a boil.
- Add potatoes and oregano.
- Cover and cook 20 minutes or until potatoes are tender.
- Add clams and heat through, about 1 minute.
- Season to taste with cayenne.
