Bread Salad in Cherry Tomatoes

  1. In small skillet, heat oil.
  2. Stir in garlic and remove from heat.
  3. Set aside.
  4. With sharp knife, halve cherry tomatoes crosswise.
  5. Working over medium-size bowl, with grapefruit spoon, scoop out and reserve seeds and pulp.
  6. Arrange tomato halves, cut sides up, on 2 platters.
  7. Stir garlic oil, basil, cheese, vinegar, sugar, and salt into reserved tomato pulp.
  8. Cut bread into 1/8-inch cubes and stir into tomato mixture just until combined.
  9. Divide bread salad among tomato halves and serve.
