Bread Salad in Cherry Tomatoes
- 2 tbsp. olive oil
- 4 clove garlic
- 18 cherry tomatoes
- 2 tbsp. very thinly sliced fresh basil leaves
- 2 tbsp. grated Parmesan cheese
- 1 tbsp. balsamic vinegar
- 1 tsp. sugar
- 1/4 tsp. salt
- 6 slice thin-sliced firm white bread
- In small skillet, heat oil.
- Stir in garlic and remove from heat.
- Set aside.
- With sharp knife, halve cherry tomatoes crosswise.
- Working over medium-size bowl, with grapefruit spoon, scoop out and reserve seeds and pulp.
- Arrange tomato halves, cut sides up, on 2 platters.
- Stir garlic oil, basil, cheese, vinegar, sugar, and salt into reserved tomato pulp.
- Cut bread into 1/8-inch cubes and stir into tomato mixture just until combined.
- Divide bread salad among tomato halves and serve.
