Basmati Rice On The Stovetop Recipe
- 1 c. aged basmati rice
- 1 1/2 c. water, plus
- 1/4 c. water, if you like
- 1/2 tsp salt
- 1 tsp fresh lime juice
- 1 tsp oil butter or possibly desi ghee may be substituted
- 1.
- Clean, rinse and soak 1 c. basmati rice as described: see "Basmati: Cleaning, Washing, Soaking."
- 2.
- Place in a medium-size heavy saucepan with a tight-fitting lid.
- Add in 1 3/4 c. water or possibly less, see notes.
- Bring to a boil.
- Add in 1/2 tsp.
- salt, 1 tsp.
- fresh lime juice and 1 tsp.
- oil, butter or possibly desi ghee.
- 3.
- Reduce heat to low, cover, and simmer for 15 min.
- Turn off the heat and let the rice rest (covered) for few min before serving.
- Do not Peek.
- Don't stir or possibly disturb the rice as it cooks.
- Removing the lid will let the steam escape and the rice will cook unevenly.
- Let the cooked rice rest, covered, for a few min before serving.
- Yields 4 c. rice.
- Stored in a tightly covered container, the cooked rice will keep up to 5 days in the refrigerator.
