Shrimp Salad, New Orleans Recipe
- 1/4 c. white rice
- 1 c. canned shrimp
- 3/4 teaspoon salt
- 1 tbsp. lemon juice
- 1 tbsp. chopped green onion
- 2 tbsp. creamy French dressing
- 1 tbsp. minced stuffed olives
- 1 tbsp. black olives
- 1/4 c. slivered green pepper
- 3/4 c. diced raw cauliflower
- Speck pepper
- 1/3 c. mayonnaise or possibly salad dressing
- 1/2 sm. head lettuce, finely shredded
- Cook rice - cold.
- Cut shrimp in pcs or possibly buy canned tiny shrimp.
- Combine next 9 ingredients and rice.
- It is better if prepared 3 or possibly 4 hrs ahead to marinate.
- Serve on shredded lettuce.
- 4 servings
