Stevia Sweetened Apple Oatmeal Muffins
- 1 cup Old Fashioned Rolled Oats
- 1 cup Whole Wheat Pastry Flour
- 1 teaspoon Ground Cinnamon
- 1/2 teaspoons Baking Soda
- 1 teaspoon Baking Powder
- 1 Tablespoon Sweetleaf Stevia Powder (See Note)
- 1/2 teaspoons Salt
- 3/4 cups Low Fat Milk
- 1 teaspoon Vanilla Extract
- 1/4 cups Canola Oil, Melted Butter Or Coconut Oil
- 2 whole Eggs
- 1 cup Applesauce (unsweetened)
- 1 whole Apple, Peeled, Cored And Chopped
- Chopped Nuts Or Granola, For Topping (optional)

- Preheat oven to 400 degrees F and coat a 12-capacity muffin tin with cooking spray.

- In a bowl stir together the oats, flour, cinnamon, baking soda and powder, stevia and salt.
- 3.
- Add the milk, vanilla, oil, eggs and applesauce.
- 4.
- Add the apple chunks.
- 5.
- Add some chopped nuts on top, leave plain or even add some granola.
- 6.
- Bake for 20 minutes.
- Note: I used only 1/2 tablespoon of stevia, making them only barely sweet which is fine for us.
- Increase to 1 tablespoon if your family is used to regularly sweetened muffins and treats.
