Five-Vegetable Slaw With Blue Cheese

  1. In a mixing bowl, whisk the olive oil into the mustard until slightly thickened.
  2. Add the lemon juice, salt and pepper and mix well.
  3. Add the vegetables.
  4. Toss to coat all the vegetables.
  5. Top with cheese to serve.
