Breakfast Mexican Pizza
- 1 each flour tortillas, whole wheat 8-inch
- 2 tablespoons pizza sauce or more as needed
- 2 slices swiss cheese tear or cut into small pieces, or shredded about 1/4 cup
- 4 tablespoons sweet bell peppers green and/or red, chopped
- 4 tablespoons tomatoes chopped
- 1 each mushrooms, button or cremini, quarted and sliced
- 1 tablespoon pickled jalapenos chopped, or more as needed
- 2 tablespoons cilantro freshly chopped
- 1 each scallions, spring or green onions sliced
- 1 large eggs pan-fried
- 1 x red hot pepper sauce or any hot pepper sauce, for serving, optional
- Preheat the oven to 425 degrees F.
- Place the tortilla on a pizza pan or a baking sheet slightly coated with cooking spray.
- Spoon the pizza sauce evenly over the tortilla.
- Place the cheese pieces on top of pizza sauce.
- Arrange the bell peppers, mushrooms, tomatoes, and picked jalapenos over the cheese.
- Bake for about 10 minutes, or until the edges of tortilla start to become slightly brown, and the cheese has melted.
- Remove from the oven, top with a pan-fried egg if needed, sprinkle with fresh cilantro and scallions.
- Drizzle with a bit hot sauce if desired,
- Serve warm.
