Make-Ahead All-Dressed Mashed Potatoes

  1. Cook potatoes in boiling water in large saucepan 15 to 20 min.
  2. or until tender; drain.
  3. Return potatoes to pan.
  4. Add margarine and 2/3 cup sour cream; mash until potatoes are smooth.
  5. Stir in 2/3 each of the chives and bacon.
  6. Spread into 13x9-inch baking dish sprayed with cooking spray.
  7. Cool to room temperature; cover.
  8. Refrigerate up to 24 hours.
  9. Remove from refrigerator 20 min.
  10. before baking.
  11. Heat oven to 400 degrees F. Bake potatoes, covered, 20 to 25 min.
  12. or until heated through.
  13. Sprinkle with cheese; bake, uncovered, 3 to 5 min.
  14. or until melted.
  15. Serve topped with remaining sour cream, chives and bacon.
