Quick and Easy Mocha Fruit Cake

  1. Soak the fruit in the coffee overnight.
  2. Preheat the oven to 180 degrees celcius.
  3. Coat a 20x28cm baking tin with cooking spray.
  4. Line the base with baking paper.
  5. Mix together the fruit mixture, chocolate and flour.
  6. Spoon into the prepared tin and bake in the oven for 50 minutes-1 hour or until cooked through.
