Pork Medallions with Apricot Glaze
- 2 bags Success Basmati Rice, Success Jasmine Rice, Success White Rice, or Success Brown Rice
- 1-1/2 lb. seasoned pork tenderloin, cut in 3/4-inch pieces
- 1 Tbsp. fresh garlic, finely minced
- 2 Tbsps olive oil
- 1/3 cup chicken broth
- 3 Tbps apricot jam
- Prepare rice according to package directions.
- Season pork with garlic.
- Heat olive oil in a medium skillet over medium heat.
- Cook pork until no longer pink.
- Add chicken broth and apricot jam.
- Heat through and simmer for 10 minutes.
- Serve over hot cooked rice.
