Pork Medallions with Apricot Glaze

  1. Prepare rice according to package directions.
  2. Season pork with garlic.
  3. Heat olive oil in a medium skillet over medium heat.
  4. Cook pork until no longer pink.
  5. Add chicken broth and apricot jam.
  6. Heat through and simmer for 10 minutes.
  7. Serve over hot cooked rice.
