Mexican Chicken Casserole Recipe
- 1 bag Doritos
- 3/4 pound Velveeta
- 1 (16 ounce.) can tomatoes, liquid removed
- 1 (10 ounce.) green chilis & tomatoes (like Rotel)
- 1 stewed chicken, save stock
- 1 minced onion
- 1 stick butter
- Brown onion in butter.
- Add in cans of green chilis and tomatoes and liquid removed tomatoes.
- Simmer 15 min.
- Debone cooked chicken and cut into bite-size pcs.
- Slice cheese 1/4 inch thick.
- Soak Doritos in chicken stock for 5 min.
- Spray 9 x 13 inch pan, layer Doritos, chicken, cheese and tomato mix.
- Bake at 375 degrees for 30 min or possibly till bubbly.
- Don't over bake.
