Mediterranean Grain Salad

  1. In a heatproof bowl, combine bulgur, 1 teaspoon salt, and the boiling water.
  2. Cover and let stand until tender but slightly chewy, about 30 minutes.
  3. Drain bulgur in a fine sieve, pressing to remove liquid; return to bowl.
  4. Add tomatoes, parsley, shallots, vinegar, and oil.
  5. Season with salt and pepper, and toss.
  6. Serve topped with cheese.
