Bee's Knees

  1. Vigorously shake the gin, simple syrup and lemon juice over ice, and strain into a chilled cocktail glass.
  2. Garnish with the lemon peel.
  3. In a small saucepan over medium heat the honey and 1/2 cup water until incorporated and dissolved.
  4. Cool to room temperature before using.
  5. Yield: 1 cup.
