New York Style Cheesecake
- 1 (12 ounce) box vanilla wafer cookies
- 14 cup melted butter
- 1 12 lbs cream cheese, room temperature
- 3 large eggs
- 1 13 cups sugar
- 2 tablespoons flour
- 2 teaspoons grated lemon rind
- 1 12 teaspoons vanilla
- 2 tablespoons heavy cream
- Combine Crust ingredients and press into the bottom and sides of a 9 1/2-inch springform pan.
- Combine cheese and eggs.
- Beat with electric mixer till perfectly smooth.
- Then, add while continuing to beat,
- sugar, the flour, and flavorings.
- Pour into the prepared pan.
- Bake at 325 for 70 - 75 minutes.
- Turn off heat and let cool in oven.
- Do not open the springform pan until completly cool.
