Guacamole

  1. In a bowl, combine all ingredients, except grape tomatoes (and reserve a couple leaves of cilantro for garnish).
  2. Gently mash with a potato masher.
  3. Stir in grape tomatoes.
  4. Place mixture into a fresh bowl and garnish with reserved cilantro.
  5. Serve immediately with your favourite chips!
  6. Notes: 1.
  7. You can use 1/8 cup of minced red onion instead of the shallot.

  9. You can use regular chili flakes or 1 teaspoon Tabasco (or your favorite hot sauce) instead of the chipotle pepper flakesit just wont have that smoky undertone.

  11. If you are not a fan of cilantro, you can omit it.
