Guacamole
- 2 whole Avocado
- 1/4 cups Cilantro, Chopped
- 1 whole Shallot, Minced
- 3 stalks Green Onion, Chopped
- 1 clove Garlic, Minced
- 1 whole Lime, Juiced
- 1 Tablespoon Olive Oil
- 1/2 teaspoons Salt
- 1/2 teaspoons Pepper
- 1 teaspoon Chipotle Chili Flakes
- 1- 1/2 teaspoon Cumin
- 1 teaspoon Coriander
- 8 Grape Tomatoes, Roughly Chopped
- In a bowl, combine all ingredients, except grape tomatoes (and reserve a couple leaves of cilantro for garnish).
- Gently mash with a potato masher.
- Stir in grape tomatoes.
- Place mixture into a fresh bowl and garnish with reserved cilantro.
- Serve immediately with your favourite chips!
- Notes: 1.
- You can use 1/8 cup of minced red onion instead of the shallot.

- You can use regular chili flakes or 1 teaspoon Tabasco (or your favorite hot sauce) instead of the chipotle pepper flakesit just wont have that smoky undertone.
- 3.
- If you are not a fan of cilantro, you can omit it.
