The Parasol
- 1/2 ounce fresh lemon juice
- 1/2 ounce fresh lime juice
- 3/4 ounce Simple Syrup
- 1 ounce Pisco (South American grape-based spirit)
- 2 ounces Aperol or Campari
- 1 large egg white
- Ice
- 4 drops of Angostura Bitters
- In a cocktail shaker, combine all of the ingredients except the ice and bitters.
- Shake vigorously for 30 seconds.
- Add ice, then shake again.
- Strain into a chilled martini glass.
- Drop 4 dots of bitters onto the surface of the drink in the pattern of a square and swirl gently with a straw or toothpick to make a design in the foamy head.
