- 1 each habanero
- 1/2 each stick of butter
- 4 each garlic cloves
- 1 cup whiskey + a splash later
- 2 tbsp soy sauce
- Combine everything except the chicken and simmer for 20 minutes.
- Add some mesquite or hickory smoke if you've got it.
- (amazon)
- Add your chicken and cover and simmer for 45 min.
- Now is the long part.
- Uncover and turn and baste until getting sticky/gummy on the outside.
- This is where I crank up the heat.
- Cook it down until the sauce is thick.
- Really thick and it starts to caramelize on the chicken.
- Oven to 400 and transfer to baking sheet.
- Add a splash of whiskey and deglaze the pan.
- Now baste over the roasting chicken and it's done when you like the way it looks!
- Eat!!
