Spinach and Potatoes

  1. Wash, peel, and thinly slice potatoes.
  2. Boil on high until tender.
  3. Drain then set aside in a large mixing bowl.
  4. Steam spinach on the stove or in the microwave until tender.
  5. Add spinach to the bowl of potatoes.
  6. In a medium saucepan, heat the olive oil to medium-high heat.
  7. Add the garlic, salt, and red pepper flakes and sautee until garlic is golden brown.
  8. Remove from heat and pour over the potatoes and spinach.
  9. Mash with a hand masher until blended completely.
