Ginger Cake Recipe
- 3 c. flour
- 4 teaspoon grnd ginger
- 2 teaspoon cinnamon
- 2 sticks unsalted butter
- 1 c. light brown sugar
- 1 c. blackstrap molasses
- 1 c. boiling water
- 2 teaspoon baking soda
- 2 large lighly beaten Large eggs
- Preheat oven to 350 degrees.
- Whisk flour, ginger and cinnamon.
- Beat butter and brown sugar.
- Whisk molasses and boiling water, add in baking soda.
- Add in flour and molasses mixtures to butter mix.
- Beat in Large eggs till smooth and thin.
- Add in to glass baking dish.
- Bake 55-65 min.
- Cold 10 min.
- Can be prepared as muffins - bake for 20-25 min.
