Apple Spice Cheesecake
- 3 cups Granny Smith apples, cored, sliced
- 6 Tbsp. sugar
- 3 Tbsp. Unsalted butter
- 1-1/4 qt. JELL-O Brand Cheesecake Filling Mix
- 1-1/2 qt. milk
- 4 tsp. ground cinnamon
- 3 each graham cracker crust
- 3/4 cup Sliced almonds, toasted
- 3/4 cup apricot jam, heated, strained
- Cook apples and sugar in butter in large saucepan or saute pan on medium heat until tender, stirring frequently.
- Cool.
- Prepare cheesecake filling mix with milk according to package directions.
- Stir in cinnamon.
- Pour evenly into pie shells.
- Arrange 1 cup of the cooked apple slices in circular pattern around top of each cheesecake, starting at the outer edge of cake.
- Sprinkle with almonds.
- Drizzle with jam.
- Refrigerate 2 to 3 hours or until chilled.
