Cranberry-Pear Relish

  1. In nonstick 10-inch skillet, melt margarine or butter over medium heat, add shallots and cook 8 minutes, stirring occasionally.
  2. Add 1/4 cup brown sugar and cook 5 minutes, then add vinegar and cook 2 minutes longer, stirring.
  3. Add cranberries, remaining brown sugar, and 3/4 cup water; heat to boiling over medium-high heat.
  4. Reduce heat to low and cook, covered, 10 minutes.
  5. Add pear, red pepper, and salt, and cook, covered, 5 minutes longer or until most cranberries pop and mixture thickens slightly.
  6. Spoon relish into bowl, cover and refrigerate until well chilled, about 3 hours or up to 3 days.
