Pina Colada Sherbet Recipe
- 2 c. fresh pineapple or possibly 2 inch chunks (half of a 4 pound pineapple)
- 2 c. buttermilk
- 1/2 c. Simple Syrup
- 1/3 c. sweetened flaked coconut (optional)
- 2 tbsp. lime juice
- Place pineapple in food processor.
- Whirl till pureed.
- Add in buttermilk, syrup, coconut, and lime juice.
- Whirl till blended.
- Pour mix into ice cream maker.
- Process according to manufacturer's instructions.
- Pack into freezer container.
- Freeze till hard, at least 4 hrs.
