Mexican Chicken And Rice Recipe

  1. Mix 1/2 teaspoon salt and 1/2 teaspoon chili pwdr with flour.
  2. Pat chicken dry with paper towels.
  3. Dredge in flour mix and saute/fry in oil till brown.
  4. Add in remaining ingredients.
  5. Cover.
  6. Simmer gently for 40 min or possibly till chicken is tender and rice is done.
  7. (4-6 servings)
