Dark Chocolate and Cherry Energy Bites
- 3/4 cups Raw Almonds
- 1/2 cups Raw Cashews
- 13 cups Dark Unsweetened Cocoa Powder, Plus More For Rolling If Desired
- 18 teaspoons Kosher Salt
- 1 teaspoon Vanilla Extract
- 8 whole Pitted Medjool Dates, Chopped And Soaked In Hot Water For 15 Minutes
- 13 cups Dried Cherries
- 2 Tablespoons Water
- Add almonds, cashews, cocoa powder, salt, and vanilla to a high speed blender or food processor.
- Blend everything together until it is finally ground.
- Blend dates, cherries, and water into nut mixture in several batches, scraping down sides of blender after each batch.
- Once the mixture comes together and resembles thick brownie batter, scoop 1 tablespoon of mixture out and roll it into a ball with wet hands.
- Roll the energy bites in dark cocoa powder if desired.
- Store energy bites in an airtight container in the refrigerator or freezer.
