Mix-and-Mash Root Vegetables

  1. Cut vegetables into 1/2-inch pieces.
  2. Place in heavy medium saucepan.
  3. Add enough water to cover.
  4. Bring to boil.
  5. Cook until vegetables are tender, about 12 minutes; drain.
  6. Transfer to processor; add butter and process to coarse puree.
  7. (Alternatively, return vegetables to same pan; add butter and mash to coarse puree.)
  8. Season with nutmeg, salt and pepper and serve.
