Salmon with Herbed Cheese and Broccoli

  1. Up to 4 hours before mealtime, place two 12-inch pieces of foil on a flat work surface.
  2. Place a salmon fillet in the center of each piece of foil and spread one tablespoon of the cheese over each piece of salmon.
  3. Pull two opposite long edges of the foil together and fold them over a couple of times to seal the foil and form a loose pouch.
  4. Roll the sides of the foil up a couple of times and press firmly to seal well.
  5. Refrigerate until ready to cook.
  6. Place the broccoli in a saucepan and add about 1/2 inch of water.
  7. (Alternatively, if you have a microwave, place the broccoli in a microwave-safe bowl and add a little water.
  8. Cover with plastic wrap or waxed paper.)
  9. Refrigerate until ready to cook.
  10. About 30 minutes before mealtime, preheat the oven to 350F.
  11. Twenty minutes before mealtime, place the salmon pouches on the center rack in the oven and bake for 15 minutes, or until it is no longer translucent.
  12. Remove from the oven and let stand for 5 minutes before unwrapping.
  13. Place the saucepan over medium heat, bring to a boil, and cook for 5 minutes, or until tender.
  14. (Alternatively, cook the broccoli in the microwave on high heat for 5 minutes, or until tender.)
  15. Carefully drain the water from the broccoli.
  16. Remove the salmon from the pouches and place a piece on one side of each plate.
  17. Arrange the broccoli alongside the salmon and serve immediately.
  18. Salmon is rich in minerals and vitamins A, D, E, B6, and B12.
  19. But most important it contains omega-3 oil, which is linked to decreasing the risk of heart disease, certain cancers, and even depression.
  20. So not only are you making a delicious meal, you are helping to keep your date healthy.
