Salmon with Herbed Cheese and Broccoli
- 2 (6-ounce) salmon fillets
- 2 tablespoons herbed cheese spread, such as Alouette or Rondele
- 2 cups broccoli florets
- Up to 4 hours before mealtime, place two 12-inch pieces of foil on a flat work surface.
- Place a salmon fillet in the center of each piece of foil and spread one tablespoon of the cheese over each piece of salmon.
- Pull two opposite long edges of the foil together and fold them over a couple of times to seal the foil and form a loose pouch.
- Roll the sides of the foil up a couple of times and press firmly to seal well.
- Refrigerate until ready to cook.
- Place the broccoli in a saucepan and add about 1/2 inch of water.
- (Alternatively, if you have a microwave, place the broccoli in a microwave-safe bowl and add a little water.
- Cover with plastic wrap or waxed paper.)
- Refrigerate until ready to cook.
- About 30 minutes before mealtime, preheat the oven to 350F.
- Twenty minutes before mealtime, place the salmon pouches on the center rack in the oven and bake for 15 minutes, or until it is no longer translucent.
- Remove from the oven and let stand for 5 minutes before unwrapping.
- Place the saucepan over medium heat, bring to a boil, and cook for 5 minutes, or until tender.
- (Alternatively, cook the broccoli in the microwave on high heat for 5 minutes, or until tender.)
- Carefully drain the water from the broccoli.
- Remove the salmon from the pouches and place a piece on one side of each plate.
- Arrange the broccoli alongside the salmon and serve immediately.
- Salmon is rich in minerals and vitamins A, D, E, B6, and B12.
- But most important it contains omega-3 oil, which is linked to decreasing the risk of heart disease, certain cancers, and even depression.
