Tahitian Chicken Salad Recipe
- 3 c. minced, cooked chicken
- 1 (15 1/2 ounce.) can pineapple chunks, liquid removed
- 1 c. sliced celery
- 1/3 c. dry roasted peanuts
- 1/4 to 1/3 c. mayonnaise
- 1 tbsp. sweet pickle relish
- 1/2 teaspoon curry pwdr
- lettuce leaves
- Combine first 4 ingredients; set aside.
- Combine mayonnaise, relish, and curry pwdr; add in to chicken mix, and toss gently.
- Serve on lettuce leaves.
- Yield: 6 servings.
