Blueberry Muffins
- 2 c. sifted flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. butter or margarine
- 1 1/4 c. sugar
- 2 eggs
- 1/2 c. milk
- 2 1/2 c. fresh blueberries or frozen, which have been thawed
- 2 tsp. sugar (for tops of muffins)
- Heat oven
- to
- 325u0b0.
- Grease
- muffin
- pans
- well.
- Sift flour, baking
- powder and salt together.
- Set aside.
- In large bowl cream butter
- and sugar together until light and fluffy. Add eggs, one at a time, and beat well after each.
- Add flour mix alternately with
- milktntil
- just combined.
- With fork, mash 1/2 of blueberries.
- Stirtn
- with a fork.
- Add rest of whole berries, mixing
- gently.
- Fill
- muffin cups (greased or paper lined)
- 3/4 full.
- Sprinkle each with sugar.
- Bake 25 to 30 minutes.
- Cool in pans 15 minutes.
- Remove.
- Serve warm.
