Turkey Burgers With Tomato Corn Salsa

  1. To make the salsa:
  2. Toss the tomatoes with the salt and drain in a colander for 15 minutes.
  3. Combine the tomatoes, corn, lime juice, garlic, cilantro, and olive oil in a large bowl.
  4. Season with salt and pepper and toss well.
  5. To make the burgers:
  6. Preheat the oven to 400 degrees F.
  7. Heat 1 tablespoon of the oil in a small skillet over medium heat.
  8. Add the onion and red pepper and cook, until softened, about 5 minutes.
  9. Cool to room temperature.
  10. Combine the onion, pepper, Creole spice mix, salt, and turkey in a large bowl.
  11. Season with pepper.
  12. Mix well and form into 4 large patties.
  13. Heat the remaining tablespoon of oil in a large ovenproof skillet over medium heat.
  14. Place the burgers in the skillet and cook until well browned, about 5 minutes per side.
  15. Transfer to the oven and cook until firm to the touch, about 6 minutes.
  16. Serve topped with the salsa.
