Mediterranean Baked Fish
- 1 pkg. (400 g) frozen fish fillets, thawed (Do not separate fillets.) King Sooper's 1 lb For $7.99 thru 02/09
- 2 medium zucchini, sliced
- 1 can (19 fl oz/ 540 mL) stewed tomatoes, drained
- 1/4 cup Kraft Sun-Dried Tomato & Oregano Dressing, divided
- 1/2 cup Cracker Barrel Crumbled Feta Cheese with Oregano, Sun Dried Tomatoes and Black Pepper
- 1 lemon, cut into 4 wedges Safeway 4 ct For $5.00 thru 02/09
- Preheat oven to 400F.
- Cut block of fish into 4 equal chunks.
- Mix zucchini and tomatoes in 9-inch square baking dish; top with fish.
- Spoon 1 Tbsp.
- of the dressing over each piece of fish.
- Bake 15 minutes; sprinkle with cheese.
- Bake an additional 8 to 12 minutes or until fish flakes easily with fork.
- Serve with lemon wedges.
