Bibs Soles' Haroset

  1. Peel and core apples.
  2. Cut in quarters.
  3. Chop in food processor until finely grated.
  4. Transfer to a bowl and stir in lemon juice, if using.
  5. Add nuts to food processor and chop until finely chopped but with a few little chunks of nuts.
  6. Stir into apples.
  7. Add wine slowly - a few tablespoons at a time - until the mixture looks like a paste.
  8. (If you make this ahead, you will probably have to add more wine as mixture thickens slightly on standing.)
  9. MAKES: about 2 CUPS
