Lemon and Carrot Cake for One

  1. Cream together the sugar and butter.
  2. Add the flour, eggs and milk.
  3. Mix thoroughly.
  4. Add the grated carrot and mix to combine.
  5. Add the lemon zest and juice.
  6. Combine.
  7. Place the batter in a large buttered ramekin.
  8. Microwave on high for five minutes.
