Avocado and Prawns

  1. Whisk all the sauce ingredients together in a small bowl.
  2. Season well and set aside.
  3. Halve the avocados lengthways and remove the stones.
  4. Scoop out the flesh and roughly dice.
  5. Season well and mix with 1 or 2 tbsp of the sauce.
  6. Half-fill 4 cocktail glasses with the avocado mixture.
  7. Mix the prawns and tomatoes together, season to taste, then pile on top of the avocado.
  8. Spoon over the cocktail sauce and serve immediately.
