Beef and Vegetable Roundup
- 2 large eggs
- 23 cup fine dry breadcrumb
- 13 cup ketchup
- 1 12 teaspoons seasoning salt
- 12 teaspoon pepper
- 2 lbs lean ground beef
- 1 cup onion, thinly sliced
- 1 cup carrot, grated
- 1 cup zucchini, grated and squeezed dry
- 13 cup fine dry breadcrumb
- 3 tablespoons hickory flavored barbecue sauce
- 2 tablespoons ketchup
- 2 teaspoons parsley flakes
- 3 tablespoons hickory flavored barbecue sauce
- 2 tablespoons ketchup
- Combine first 5 ingredients in large bowl.
- Add ground beef.
- Mix well.
- On large sheet of foil, pat out beef mixture to 10 x 15 inch rectangle.
- Combine next 7 ingredients in large bowl.
- Spread on top of beef rectangle, leaving 1 inch edge on 1 long side.
- Roll up from uncovered long side, jelly-roll style, using foil as a guide.
- Press seam against roll to seal.
- Place, seam-side down, on greased baking sheet with sides.
- Bake, uncovered, in 350F oven for 30 minutes.
- Combine second amount of barbecue sauce and third amount of ketchup in small cup.
- Spread on top of meatloaf.
- bake for another 25 to 30 minutes until fully cooked, and internal temperture of beef reaches 160F
- Let stand for 10 minutes.
- Cuts into 8 slices.
