Baked Catfish

  1. Heat oven to 350u0b0.
  2. Wash catfish in cold water; pat dry with paper towels.
  3. Rub cavity with salt and pepper.
  4. Mix bread cubes, parsley, pickle relish, egg, salt and 1/4 teaspoon pepper.
  5. Spoon lightly into cavity.
  6. Close opening with skewers; lace with string.
  7. Brush fish with butter.
  8. Cut 3 slits in each side and place a slice of salt pork in each slit.
  9. Place fish in greased shallow baking dish; bake uncovered, spooning broth over fish occasionally until fish flakes easily with fork (45 to 60 minutes).
  10. Makes 6 servings.

  12. Can substitute trout, bass or red snapper.
