Rice with Pigeon Peas
- 1 onion, chopped
- 1/2 cup chopped green peppers
- 2 slices OSCAR MAYER Bacon, cut into 1-inch pieces Rite Aid 2 For $7.00 thru 02/06
- 2 slices OSCAR MAYER Smoked Ham, chopped
- 3 cloves garlic, minced
- 2 cups water
- 1 can (15 oz.) pigeon peas, undrained
- 1/2 cup tomato sauce
- 1 pkt. seasoning with coriander and annatto
- 1/4 tsp. ground black pepper
- 2 cups long-grain white rice, uncooked
- Cook and stir first 5 ingredients in large skillet on medium-high heat 5 min.
- or until vegetables are crisp-tender.
- Add water, peas, tomato sauce and seasonings; stir.
- Bring to boil.
- Stir in rice; cover.
- Simmer on medium-low heat 20 min.
- or until rice is tender.
