Rice with Pigeon Peas

  1. Cook and stir first 5 ingredients in large skillet on medium-high heat 5 min.
  2. or until vegetables are crisp-tender.
  3. Add water, peas, tomato sauce and seasonings; stir.
  4. Bring to boil.
  5. Stir in rice; cover.
  6. Simmer on medium-low heat 20 min.
  7. or until rice is tender.
