Pork and Peanut Sauce Pasta Salad

  1. Mix first 4 ingredients until blended.
  2. Reserve 1/2 cup peanut butter mixture.
  3. Pour remaining over meat in shallow dish; turn to evenly coat meat.
  4. Refrigerate 6 hours to marinate.
  5. Heat oven to 400 degrees F. Remove meat from marinade; discard marinade.
  6. Place meat in shallow pan sprayed with cooking spray.
  7. Bake 20 to 25 min.
  8. or until meat is done (160 degrees F).
  9. Meanwhile, cook pasta in large saucepan as directed on package, omitting salt and adding broccoli to the boiling water for the last 5 min.
  10. Slice meat; place in large bowl.
  11. Drain pasta mixture.
  12. Add to meat along with the tomatoes and remaining peanut butter mixture; mix lightly.
