Papaya and Blueberry Salad With Ginger-Lime Dressing
- 3 tablespoons freshly squeezed lime juice
- 1 tablespoon mild honey
- 2 tablespoons finely chopped crystallized ginger
- 2 ripe papayas, peeled, seeded, and diced
- 1 cup blueberries
- 1 tablespoon slivered fresh mint leaves, plus mint sprigs for garnish
- Mix together the lime juice, honey and ginger in a large bowl.
- Add the fruit and slivered mint leaves, and toss together.
- Serve, garnishing each bowl with a sprig of fresh mint.
