Creamy Vegetable Gratin
- 1 each green and yellow zucchini, sliced
- 1 cup Philadelphia Herb & Garlic Light Cream Cheese Product
- 2 Tbsp. milk
- 1 cup Cracker Barrel Shredded Mozzarella Cheese
- 2 plum tomatoes, sliced
- 1/4 cup panko bread crumbs
- 1/4 cup Cracker Barrel Finely Shredded 100% Parmesan Cheese
- Heat oven to 375 degrees F.
- Combine zucchini.
- Mix cream cheese product and milk until blended.
- Spread half the zucchini onto bottom of 8-inch square baking dish sprayed with cooking spray; cover with layers of 1/3 each of the cream cheese mixture and mozzarella.
- Repeat all layers.
- Top with tomatoes, remaining cream cheese mixture and remaining mozzarella.
- Combine bread crumbs and Parmesan; sprinkle over casserole.
- Bake 20 to 25 min.
- or until vegetable mixture is heated through and top is golden brown.
