Broccoli Salad
- 1 large head of Broccolli
- 12 oz Bacon
- 1/2 cup Red Onion (finely chopped)
- 1 1/2 cup Colby Jack Cheese (shredded)
- 12 Grape Tomatoes
- 1 cup Mayonnaise
- 1/4 cup Granulated Sugar
- 2 tbsp White Vinegar
- Fry bacon and set aside to cool.
- While bacon cools, cut broccolli into bite size florets, cut tomatoes into halves, and finely chop/dice the onion.
- Once cool enough to handle, crumble the bacon.
- Put all of the Salad Ingredients into a medium to large bowl.
- In a small bowl combine the Dressing Ingredients and mix well (until the sugar dissolves).
- Pour dressing over salad a little at a time and gently toss to distribute throughout salad.
- * Depending on the size of your head of broccolli, you may or may not need all of the dressing.
