Grilled Southern Shrimp a l'Orange Skewers

  1. If using wooden skewers, soak in water for 30 minutes (or as directed on package label).
  2. For marinade: In large bowl, whisk together 1 cup pineapple juice and next five ingredients.
  3. Add shrimp; toss to coat.
  4. Cover and chill 30 minutes to 1 hour.
  5. Meanwhile, in medium saucepan over medium-low heat, mix next eight ingredients and the remaining 1?2 cup pineapple juice.
  6. Bring to a simmer; cook 5 minutes, then set aside.
  7. Preheat grill to medium-high.
  8. Thread shrimp onto skewers, alternating with onion and pineapple chunks.
  9. Grill 4 to 5 minutes per side, until shrimp is pink and opaque.
  10. When serving, drizzle a little sauce over each skewer and place remaining sauce in a bowl for dipping.
