Grilled Southern Shrimp a l'Orange Skewers
- 1 1/2 c. pineapple juice
- 1/4 c. olive oil
- 1/4 c. lime juice
- 1 tsp. salt
- 1/2 tsp. Black pepper
- 2 lb. shrimp
- 2 c. orange marmalade
- 1/2 c. whiskey
- 1/4 c. lemon juice
- 1 jalapeno pepper
- 2 tsp. Hot pepper sauce
- 1 tsp. ginger
- 1/2 tsp. salt
- 1/4 tsp. Pepper
- 2 large red onions
- 1 fresh pineapple
- If using wooden skewers, soak in water for 30 minutes (or as directed on package label).
- For marinade: In large bowl, whisk together 1 cup pineapple juice and next five ingredients.
- Add shrimp; toss to coat.
- Cover and chill 30 minutes to 1 hour.
- Meanwhile, in medium saucepan over medium-low heat, mix next eight ingredients and the remaining 1?2 cup pineapple juice.
- Bring to a simmer; cook 5 minutes, then set aside.
- Preheat grill to medium-high.
- Thread shrimp onto skewers, alternating with onion and pineapple chunks.
- Grill 4 to 5 minutes per side, until shrimp is pink and opaque.
- When serving, drizzle a little sauce over each skewer and place remaining sauce in a bowl for dipping.
