Mushrooms in a Scallion Dressing (Kinoko No Aemono-Japan)

  1. Wipe the mushrooms with a damp cloth.
  2. If they are large, quarter them; otherwise, halve them.
  3. Finely chop the scallions.
  4. Put the mushrooms and scallions in a bowl.
  5. Add all the remaining ingredients and toss to mix.
  6. Leave the mushrooms to marinate in their dressing for 5 minutes, then toss again and set aside another 5 minutes.
  7. Toss the mushrooms once more before serving, garnished with scallion shreds if you like.
