Chicken Fried Steak and Creamy Gravy

  1. Season steaks with salt and pepper.
  2. Reserve 1/4 cup of flour.
  3. Dredge each steak in flour, egg and cracker crumbs.
  4. In a large cast iron skillet over medium high heat corn oil.
  5. Add steaks and cook until golden brown and crisp.
  6. Transfer to paper towels to drain.
  7. Pour off all but 4 tablespoon remaining oil and set over low heat.
  8. Whisk 1/4 flour into hot oil and bring to simmer.
  9. Gradually whisk in milk and bring to a simmer.
  10. Season with salt and pepper.
