Baja Bites
- 15 ounces, weight Canned Black Beans, Drained And Rinsed
- 15 ounces, weight Canned Corn, Drained
- 4 whole Tomatoes, Diced
- 1/2 cups Red Onion, Chopped
- 1 cup Cilantro, Snipped
- 1 whole Jalapeno, Seeded And Diced
- 2 Tablespoons Fresh Lime Juice
- 1 teaspoon Salt
- 1/2 teaspoons Pepper
- 1 teaspoon Garlic Powder
- 2 dashes Hot Sauce
- 6 cups Cooked Rice
- 2 cups Taco Seasoned, Shredded, Cooked Chicken
- 2 cups Taco Cheese, Divided Use
- Sour Cream And Fresh Salsa
- 36 whole Store Bought Refrigerated Wonton Wrappers
- Preheat oven to 350 F.
- In a large bowl, combine black beans, corn, tomatoes, onion, cilantro, jalapeno, lime juice, salt, pepper, garlic powder and hot sauce.
- Stir in the cooked rice and chicken and 1 cup taco cheese.
- Spray three 12 count muffin tins with non-stick spray (recipe makes 36).
- Place a wonton wrapper in each spot, spray wonton with more oil and bake for 6 minutes at 350 F. Remove from oven and carefully fill each cup with the filling mixture.
- Top with remaining taco cheese and bake an additional 6 minutes, or until golden brown on the edges.
- Serve hot with a dollop of sour cream and a spoon full of fresh salsa.
