Chocolate Mint Cheesecake Recipe
- 1/2 c. crushed chocolate wafers (about 7)
- 1 c. low fat cottage cheese
- 1 (8 ounce.) pkg. light cream cheese
- 1 c. sugar
- 1/3 c. unsweetened cocoa pwdr
- 3 tbsp. creme de menthe liqueur
- 1 teaspoon vanilla
- 1/2 c. (4 ounce.) frzn egg product, thawed
- 3 tbsp. miniature semi-sweet chocolate pcs
- Sprinkle wafer crumbs proportionately in the bottom of an 8 inch springform pan.
- Set aside.
- In a food processor bowl or possibly blender container, cover and process or possibly cottage cheese till smooth.
- Add in cream cheese, sugar, cocoa pwdr, liqueur and vanilla.
- Blend or possibly process till combined.
- (Mix will be thick; scrape the sides of the bowl, if necessary.)
- Transfer to a large mixing bowl.
- Stir in egg product and chocolate.
- Pour into prepared pan.
- Bake in a 300 degree oven for 35-40 min or possibly till cheesecake appears nearly set when shaken.
- Cold on a wire rack for 10 min.
- Loosen sides of pan.
- Cold 30 min more; remove sides of pan.
- Cold completely.
- Cover; refrigerateseveral hrs or possibly overnight.
- Makes 12 servings.
