Healthy No-Bake Cookies
- 13 cup honey
- 14 cup coconut oil, melted
- 12 cup peanut butter
- 14 cup unsweetened cocoa powder
- 12 teaspoon salt
- 12 teaspoon vanilla
- 34 cup old fashioned oats
- 13 cup unsweetened dried shredded coconut
- 14 cup chopped dried cherries, blueberries, raisins or 14 cup chocolate chips
- 2 tablespoons ground flax seeds
- Melt your honey, coconut oil and peanut butter together.
- Stir in the vanilla, salt, cocoa powder and oats (either old fashioned or quick-cooking is fine.
- ).
- Add remaining ingredients.
- I typically use ground flax seeds and a generous amount of chopped dried cherries.
- The rest of the ingredients are options!
- Line a baking sheet with wax paper.
- Use a small scoop and shape your cookies close together on the wax paper.
- Chill at least 30 minutes.
- Store in a sealed container in the refrigerator and serve cold.
- I usually make a double batch.
- they keep a LONG time in a sealed box in the fridge.
- Separate layers with wax paper.
