Fruit Terrine Supreme

  1. Terrine Dissolve jelly powder in boiling water.
  2. Combine orange juice and ice cubes.
  3. Add to jelly, stirring until ice is melted.
  4. Stir in orange rind.
  5. Chill until slightly thickened.
  6. FOLD prepared topping into jelly mixture.
  7. Spoon into 3, 9 x 5 inch loaf pans.
  8. Chill 4 hours or overnight.
  9. To unmold, dip pans in warm water for 15 seconds and invert onto cutting board or serving platter.
  10. Slice and serve with raspberry sauce.
  11. Raspberry Sauce Combine raspberries, sugar, water and lemon juice in medium saucepan.
  12. Bring to boil, reduce heat to medium and cook for 2 - 3 minutes.
  13. PROCESS in blender for 1 minute or until smooth.
  14. Sieve puree through colander to extract seeds.
  15. Chill.
  16. Stir well before serving.
  17. Garnish with fresh raspberries and orange peel if desired.
